Friday

As I mentioned in my previous post, Jay’s birthday was Friday. He didn’t really want to do anything special for it, but Dylan and I set up a mini surprise party anyway. We went to a party store where Dylan picked out Elmo-themed hats, streamers, party games and plates. Pin The Nose on Elmo was a big hit.

Dylan was so cute about Jay’s bday. He loves birthdays in general so he was pumped to celebrate with Jay. He screamed, “Happy Birthday, Dada!” and sang him the birthday song a bunch of times.

My contribution were a few small gifts and a Paleo-friendly dessert. It was a black bottom banana cream pie served with whip cream. It didn’t look very fancy but tasted great! I’ll just give you the gist of it here…

You make a pecan crust:

Then a coconut custard:

While those cool, you whip up some ganache using coconut milk.

Which looks like this all combined:

Layer the crust with chocolate (aka the “black bottom”) then bananas:

Top with the custard and refrigerate at least 4 hours until fully set. Top each piece with whipped cream (you can make coconut whip cream to keep it more Paleo, but I just used a regular organic whipped cream.)

If any of you want the exact recipe let me know and I’ll post it!

Saturday

Since Dylan and I are leaving for a trip to New Hampshire this Tuesday, we didn’t plan anything extravagant for the weekend. We just wanted to hang out as a family.

Dylan and I played with toys when he woke up. I love seeing new skills and interests develop while he plays. For example, when he creates little scenes with his Playmobil pieces, he always decorates the tables. Here he put some flowers on the table along with a water pitcher and glass on a side table. He then had one of the men sit down and relax. He switched out the people and various other things, but always made sure the vase of flowers stayed put.

He’s also super into families. He always designated a “Mama”, “Dada” and “Baby”. The dada generally gets shuffled off to work and then the mama and baby go visit him there. The family then listens to the song Fireflies on the dada’s work computer. Dylan makes me play the song (his favorite) on my phone while he makes the figurines dance.

Jay and I took turns working out later in the morning. I went for a walk and then when I got back Jay went to the gym. While Jay was at the gym Dylan and I went to the pool. Once we all reconvened, we set out to go bowling.

Dylan spotted the arcade at the bowling alley on this visit and was more interested in the games than bowling, so we ended up staying in the arcade mostly. That was fine because our goal was just to get Dylan out of the house to have fun because Jay and I had plans for the evening. He definitely had fun at the arcade.

We left Dylan with his babysitter for the evening and went out to celebrate Jay’s birthday with some friends. I tried to get a picture, but Trey photobombed it. Smile

Sunday

We hung out around the house all morning on Sunday and then went out in the afternoon. My phone has been acting up so our first stop was an Apple store. Dylan ran around and played games on the computer while we waited for my phone to get fixed.

He never stops moving, but every so often he pauses for a cuddle.

It’s my favorite.

We got lunch after that…

And then had time to kill before a movie so we walked around Toys R’ Us. Dylan got another tea set. He has more tea sets than I can count!

We also killed time at Jay’s work, where we all listened to Fireflies on Jay’s computer. Smile Dylan also had fun dancing on the green screen wall.

The highlight of the day was seeing Turbo on the big screen. This is Dylan’s second movie at a theater in a month (we saw Monters University a few weeks ago) and he love, love, loooooves it. He sat riveted through the whole film and then shouted, “Again!” as soon as it was over. I can’t wait to take him to see Planes later this summer.

It was a fun and relaxing weekend and now my sights are set on New Hampshire and getting a chance to connect with my friends and family there!

You have some great family times, in Georgia and New Hampshire! It is so evident that you appreciate the value of a warm and loving family and you have done a wonderful job of providing that for Dylan. You bring so much love and joy all of your family:)
